Hello
We are setting up a new office with about 60 workstations and 5 servers. We
will be using cat6 for servers and cat5e for the rest. We will want a
good switch(s) for the server room. So what would a top end switch /
configuration for this be. All workstations will be Gigabit at least.

This is a really broad question, I think you need to do some
research so you can narrow your questions and specify what
you need so far as:

High traffic segments
Location of (groups of?) workstations
Security and logical grouping
Management features
Existing or new office construction vs wiring options vs
location of secondary switches

A few decent switches come from HP, 3Com, Cisco. Check
their respective websites for models and features.
